Almond Paste Cookies
- 2 8-ounce cans almond paste
- 1.5 cups Confectioners' sugar
- 0.5 teaspoon Salt
- 2 large Egg whites
- 2 tablespoons Honey
- 1 cup Pine nuts

1. Preheat oven to 350°F.
2. Line two baking sheets with parchment paper.
Processing the Almond Paste
1. Place almond paste in the bowl of a food processor.
2. Pulse until finely ground.
3. Add confectioners' sugar and salt and pulse until combined.
Preparing the Dough
1. In a large bowl, beat egg whites until frothy, about 2 minutes.
2. Add almond mixture and honey and beat until smooth.
Coating and Baking
1. Place pine nuts in a shallow bowl.
2. Roll dough into 2-inch rounds.
3. Roll each round in pine nuts to coat, then place on prepared baking sheet.
4. Bake cookies until golden, about 15 minutes.
5. Cool for 5 minutes on baking sheet then transfer to a wire rack and cool completely.
