Ingredients

Pasta
- 8 oz Penne rigate
- 2 clove Garlic, finely diced
- 0.5 tsp Chili flakes, according to taste, or fresh chilies
- 1 can San Marzano tomatoes
- 2 tbsp Tomato paste
- 0.5 c Basil
- 0.5 c vegan cheese
- 2 tbsp Olive oil
- 0.5 tsp Salt, or to taste
- 0.5 tsp Pepper, or to taste

Directions

To make the sauce
1. Start by heating olive oil in a pan over medium heat.
2. Add minced garlic and red pepper flakes and cook until the garlic is fragrant, about a minute.
3. Then add a can of crushed tomatoes and let the sauce simmer for about 15 minutes, until it thickens.
4. Season with salt and pepper to taste.
To prepare the pasta
1. In the meantime, cook the penne pasta according to package instructions.
2. Drain the pasta and add it to the tomato sauce.
3. Be sure to add as well some of the salted cooking water.
4. Toss everything together and let it cook for a few minutes, until the pasta is coated in the sauce.
Garnishing and serving
1. Garnish with some chopped fresh parsley and grated (vegan) cheese.
2. Serve hot.
