- 2 Chicken breast, sliced in half
- 1 green pepper
- 1 Red pepper
- 1 Yellow onion
- egg roll wrappers
- provolone cheese
- Mozzarella cheese
- Salt
- Pepper
- Onion powder
- Garlic powder
- Smoked paprika
- lemon pepper seasoning

Preparing the Chicken
1. Coat the chicken breast in olive oil then season.
2. Cook for about 4-5 mins per side.
3. While that’s cooking, chop your peppers and onions.
4. Remove chicken from skillet and let cool.
Preparing the Onions and Peppers
1. To the same skillet, add butter and olive oil.
2. Toss in the onions and peppers.
3. Lightly season and cook until soft.
4. Add the chicken back in and cook for about another minute.
Assembling the Egg Roll
1. Lay out the egg roll wrapper in a diamond so that a point is facing you.
2. Place half a piece of provolone cheese in the lower half of the wrapper.
3. Top with a scoop of chicken, making sure not to overfill.
4. Top the chicken with mozzarella cheese.
Rolling the Egg Roll
1. To roll, fold the bottom flap first then the sides and begin to roll, tucking the chicken under as you roll.
2. Once you get to the top flap, wet down both sides of the corner then continue to roll.
3. Make sure to keep them flap side down until you place them in the grease.
4. If it bursts open, just wrap it with a second wrapper.
Frying the Egg Roll
1. Fry until golden brown, making sure to flip often so they don’t burn.
2. Pair with your favorite dipping sauce and enjoy.
