Ingredients

Peach Filling
- 3 lb yellow peaches
- 0.333 c light brown sugar, can add more to taste if desired
- 0.333 c White sugar, can add more to taste if desired
- 1.5 tsp Cinnamon
- 0.5 tsp Nutmeg
- 1 tsp Vanilla extract
- 0.25 c Unsalted butter
- 4 tsp Cornstarch, cornstarch slurry
- 4 tsp water, cornstarch slurry
Oat Topping
- 0.75 c whole oats
- 1 c light brown sugar
- 0.75 c all-purpose flour
- 1 tsp Cinnamon
- 0.5 c Unsalted butter, diced (1 stick)

Directions

1. Preheat oven to 350ºF.
2. Peel and slice peaches into chunks or slice shapes.
3. In a large skillet on medium heat, add in butter. Once the butter is melted, add in peaches.
4. Next, add in brown sugar, white sugar, cinnamon, vanilla and nutmeg, then combine with peaches. Bring Peaches to a simmer and cover with lid. Periodically stir and let simmer for about 3-5 minutes.
5. Slightly reduce heat. Combine cornstarch & water (Cornstarch Slurry) in a cup, then add into the skillet. Frequently stir until well combined and peaches thicken. I recommend tasting the peach mixture to ensure it is to your desired sweetness. Be mindful that the oat topping will add additional sweetness.
6. Remove skillet from heat and let cool for about 10 minutes or until peaches are room temperature.
7. For oat topping, in a mixing bowl, combine & whisk oats, brown sugar, flour and cinnamon. Then add in cold diced butter. Use your hands or chopping utensil and bring ingredients together to form a dough crumbles. Once topping is formed, break it apart into crumbles.
8. Place cooked peaches into a baking dish. Then, add oat topping crumbles on top of peaches. Bake for uncovered 20-25 minutes. Periodically check to make sure it is not overflowing.
9. Let cool for 10-20 minutes.The oat topping will harden as the dish cools. Topping may take longer to cool to harden.
10. Optional, eat with ice cream and/or caramel.
