Main Ingredients
- 8 oz thin beef slices
- 1.25 cup diced tomatoes, with juice if using canned diced tomatoes
- 0.5 medium onion
- 1.5 cup cooked rice
- 2 tbsp Oil
- 1 cup Mozzarella cheese, shredded
- 2 small blocks curry
Sauce Ingredients
- 2 tbsp Soy sauce
- 0.5 tbsp Dark soy sauce, optional
- 1 tbsp Ketchup
- 0.5 tbsp Sugar
- 0.5 tbsp Oyster sauce
- 1 tbsp Corn starch
- 0.5 cup water

1. Bring a small pot of water to a boil. Cook the beef slices in boiling water until they change color, then remove them immediately and set aside. Be careful not to overcook.
2. In a small bowl, mix together all the sauce ingredients until well combined.
3. In a non-stick pan or cast iron, heat up 2 tablespoons of oil over medium heat. Add diced onions to the pan and cook for 3-4 minutes until they are soft and slightly browned. Stir occasionally.
4. Add diced tomatoes and use a spatula to crush the tomatoes once they are soft to let the juice out if using fresh tomatoes.
5. Pour in the sauce and add the curry blocks.
6. Add the cooked beef slices and cooked rice. Stir until everything is well mixed and combined.
7. Turn the heat down to low then add a layer of shredded Mozzarella on top. Cover the pan with a lid for 1-2 minutes until the cheese has completely melted.
8. Serve hot and enjoy.
