- 1 Onion
- 1 Bell peppers
- 2 tbsp Olive oil
- 1 clove Garlic
- 1 tsp Cumin
- 1 tsp Paprika
- 2 cans crushed tomatoes
- 4 qty Eggs
- 1 bunch Fresh parsley
- 50 grams Goat cheese

1. Heat olive oil in a pan on medium heat and add the onions and capsicum. Stir for 2-3 mins until sauteed
2. Add crushed garlic, cumin and paprika. Stir for 2 mins until fragrant
3. Add canned tomatoes, stir then add the eggs slowly into small holes created with a spoon
4. Cook uncovered for 5 minutes and then covered for 2 minutes
5. Serve with chipped parsley, goats cheese and toasted bread
