- 1.25 lb Atlantic Salmon
- 2 tbsp Unsalted butter
- 1 Scallions, roughly chopped
- 2 large garlic cloves
- 2 c Butternut squash, cut into small cubes
- 1 can white beans
- 1 bunch Kale, chopped
- 2 c chicken or veg stock or water
- 1 c orzo
- 1 Lemon, sliced
- 1 Lemon, zest and juice
- 1 c chopped parsley
- 1 c Goat cheese, crumbled, optional

1. Preheat oven to 300 degrees.
2. Season Salmon with salt and pepper on all sides. Slice into four portions.
3. Heat an ovenproof skillet over medium and melt butter. Add scallions, garlic, and lemon zest and cook until softened.
4. Add squash, cook for a few mins. Then add the beans and kale. season with salt and pepper.
5. Stir in orzo and stock. Season with a little more salt. Bring to a boil, give a stir. And then top with salmon and one lemon slice on each.
6. Put the skillet in the oven for 20-25 minutes until the salmon is just turning opaque around the edges and is nearly cooked through.
7. Take out of the oven, scatter with herbs and goat cheese in the orzo. Squeeze the juice of whole lemon all over it!
