Ingredients

Main Dish
- 4 Potatoes, medium, cubed
- 2 tbsp Avocado oil
- 2 tbsp Healthy Rican Sofrito
- salt and pepper, to taste
- 4 Chicken breasts, boneless, sliced
- 1 tbsp Healthy Rican Savory Spice Mix
- 2 handfuls Asparagus, or any other vegetable of choice
- Healthy Rican Adobo

Directions

Preparation
1. Preheat the oven to 400°F.
2. In a large bowl, combine potatoes, oil, herb seasoning, and salt and pepper to taste; toss to coat.
3. Transfer to a roasting baking dish, or a 15x10x1-in. baking pan coated with cooking spray.
4. Sprinkle the chicken with the Savory Spice Mix or adobo, coat evenly.
5. Arrange the chicken over the potatoes.
6. Add the vegetables on top of the chicken, and sprinkle with a bit of adobo.
7. Cover with aluminum foil.
8. Bake at 400°F for 45-50 mins.
9. Roast until a thermometer inserted in chicken reads 170°-175° and vegetables are just tender.
10. If desired, add additional salt and pepper to taste.
11. Enjoy!!
