- 3 Eggs
- 1 Tbs Unsalted butter
- 3 slice Gruyere or Swiss cheese
- 1 Tbs Chives, thinly sliced
- Fine sea salt and freshly ground white pepper

1. In a bowl crack the eggs and season lightly with fine sea salt, add a tsp of water and whisk till fully incorporated.
2. Heat a 10 inch nonstick pan over medium heat, then add the butter.
3. When the butter has melted, pour the eggs into the center of the pan and stir with a silicone spatula for 10 seconds.
4. As soon as the eggs begin to set, looks like scrambled eggs, remove from heat and lay slices of cheese then sprinkle with chives.
5. Tilt the pan and gently roll omelette of the pan and onto a plate.
6. Serve immediately
