- 0.333 c extra virgin olive oil
- 0.5 c brown sugar
- 0.333 c granulated cane sugar
- 1 Large egg
- 0.75 c all-purpose flour
- 0.333 c all-purpose flour
- 0.25 tsp baking soda
- 0.75 tsp salt
- 1 c chocolate
- 0.25 c pistachios

1. Preheat oven to 325F.
2. Line a baking tray with parchment paper.
Mixing Wet Ingredients
1. In the bowl of a stand mixer, beat the egg, olive oil, and sugars until creamy, about 1-2 minutes.
Mixing Dry Ingredients
1. In a separate bowl, whisk the flour, baking soda, and salt to combine.
2. Add to the stand mixer bowl.
3. Mix until well-combined, then fold in the chopped chocolate.
Forming Cookies
1. Using 2-3 tbsp. dough per cookie, roll into a ball, then place on the prepared baking tray 2” apart.
2. Add the pistachios on top.
1. Bake for 16-17 minutes.
2. Let cool for at least 10 minutes on the baking tray.
3. Enjoy!
1. For the crinkle effect, tap the cookie pan on the stovetop halfway through baking to interrupt the rising process.
2. Repeat this again after baking.
3. Just trust me on this one ;)
