- 2 cup Oatmeal
- 1 tsp Baking powder
- pinch Salt
- 2 Tbs Cornstarch
- 0.33333333333333331 cup Brown sugar
- 0.33333333333333331 cup Vegetable oil
- 1 tsp Lemon zest
- 0.25 cup Almond milk
- 0.25 cup Powdered sugar

1. Preheat the oven to 180ºC/350ºF.
2. In the food processor, mix the oatmeal, baking powder, salt and cornstarch and blend until you get a fine and homogenous flour. Add sugar, oil, lemon zest and process, adding the almond milk slowly, it’s possible that you don’t need to use all of the milk. Process until the dough is firm and incorporated, it should hold its shape when pressed.
3. Transfer the dough to your work surface sprinkled with flour. Spread and roll the dough until you get a thickness of around half an inch or less.
4. Cut circles with a cookie cutter and place on a previously greased baking tray.
5. Bake for 8 to 10 minutes or until the edges start to brown and the tops are firm. Remove from the oven and let them chill.
6. Spread one with dulce de leche and close with another one on top. Dust with powdered sugar. Share and enjoy.
