- 3 tbsp Olive oil
- 1 Onion, finely chopped
- 2 small carrots
- 2 ribs celery
- 3 clove Garlic, minced
- 3 tbsp Flour
- 4 c Chicken Broth
- 2 cans fire roasted diced tomatoes
- 3.5 tbsp Tomato paste
- 2.5 tsp Sugar
- salt and pepper, to taste
- 0.5 c Heavy cream

Preparation of vegetables and base
1. In a medium saucepan, over medium-high heat, add oil and sauté onion, carrot, and celery until soft, about 3-4 minutes.
2. Add garlic and sauté another minute.
3. Reduce heat to medium-low and add flour and cook for 1 minute.
Adding ingredients and cooking
1. Add chicken broth, tomatoes, tomato paste, and sugar and bring to a boil.
2. Cover and cook about 15 minutes.
Puréeing and final steps
1. Ladle half of the soup into a food processor and purée until smooth.
2. Return to the saucepan with the remaining soup and heavy cream and cook until the soup is just heated through.
3. Season with salt and pepper and ladle into bowls.
