Ingredients

For the dough
- 470 g Bread flour
- 1.5 g yeast
- 25 g Sugar
- 285 g Ice water
- 2 tsp Kosher salt
- 1 Tbsp Olive oil
- 24 leaves Fresh basil
- 3 cloves Garlic, or to taste
- 8 oz low-moisture mozzarella cheese, shredded or torn, plus more as needed
- Tomato sauce, pre-made or cooked

Directions

1. Combine bread flour, sugar, and yeast in the bowl of a food processor.
2. Process it together a few times just to combine everything before streaming the ice water through the feed tube as the machine runs until a ball of dough forms. This should give you a dough with a hydration of about 60%.
3. After letting the dough rest for about 15 minutes, add kosher salt and olive oil. Pop the lid back on and process for anywhere from 60-90 seconds until you have a smooth, supple, and silky dough.
4. Using a lightly oiled countertop and hands, knead the dough until it cohesively comes together in a very soft and smooth mass. Form it into a taut ball and place it into an oiled container to proof in the fridge overnight to improve the dough’s texture and flavor.
5. Divide the chilled dough in half and stretch it into two taut balls. Place the balls of dough on a lightly floured rimmed baking sheet or proofing box for about 2 hours at room temperature or until it is light and easy to work with.
6. Flour both your work surface and the dough itself and pat the dough out as wide as possible with your fingers. Leave a very small rim around the outside that will eventually become the crust.
7. Begin gently and slowly stretching the dough by passing it knuckle over knuckle until it is as thin as you can get it, which in this case, is about 14-16 inches wide. Place the stretched out dough on a generously floured pizza peel.
8. Add a layer of a cooked tomato sauce with garlic and basil as well as lots of shredded low moisture mozzarella cheese.
9. Place the pizza in the oven at 700°F for 5-7 minutes. Rotate the pizza often and make sure to pop any air bubbles before taking it out of the oven once the exterior is deeply browned and the cheese is melted and golden brown.
10. Let the pizza rest for 5 minutes before slicing and serving.
