Ingredients

Main Ingredients
- 2 liters water, to boil the rice in
- 2 cups Sella Rice
- 0.5 cup ghee
- 1.5 cups Sugar
Spices and Nuts
- 10 Cardamom
- 5 Cloves
- 1 Star anise
- 0.25 cup raw almonds
- 0.25 cup Raisins
- 0.25 cup coconut slices
- 0.25 cup Shredded coconut
- 0.25 cup chopped pistachios
Additional Ingredients
- 0.5 cup water, to add to the sugar
- 0.25 tsp green food coloring
- 0.25 tsp yellow food coloring
- 0.25 tsp red food coloring
- 0.25 tsp kewra essence
- 0.333 cup khoya/mawa
- 0.25 cup tutti frutti
- 1 cup angoori gulab jamun

Directions

Preparation of Rice
1. Soak the rice for 2-3 hours.
2. Add 2 liters of water in a pot along with 4 cardamoms, 3 cloves & 1 Star anise.
3. Boil until 90% cooked.
4. Then drain and set it aside.
5. Take 3 small containers and add food coloring to each.
6. Add 1/4 (hot water) in each.
7. Now add 2 tbsp of cooked rice to each container.
8. Set it aside.
Toasting Dry Fruits and Nuts
1. In a frying pan, add 2 tbsp of ghee and add the dry fruits and nuts (except shredded coconut).
2. Toast it for 1 minute on high heat.
3. Take it out once done.
Preparing the Sweet Rice
1. In the large pot, add the rest of the ghee.
2. To that add cloves, cardamom, sugar and water.
3. Let it all melt.
4. It should be bubbly and sticky consistently.
5. Then add rice and let it completely soak the sugar syrup.
6. Add kewra essence as well.
7. Mix.
8. Now it’s time to let it cook on low heat for 5 minutes.
9. Then place food colored rice in 3 even piles.
10. Now add toasted fruits/ nuts.
11. Lastly add tutti frutti, shredded coconut and chopped khoya.
12. Now cover and cook on low flame for 20-30 minutes.
13. Once done, you must fluff up the rice or they will be a lumpy mess.
14. Add angoori gulab jamun on top and some extra pistachios and you got yourself the most gorgeous looking sweet rice.
