Ingredients

Garlic Confit
- 4 c Garlic, peeled
- Oil, as needed
- 3 sprigs Rosemary
Miso Garlic Bread
- 8 oz Butter, softened
- 1.5 tbsp red miso paste
- 1 c garlic confit
- 2 stalks scallion greens
- Bread, as needed

Directions

For the garlic confit
1. Preheat the oven to 325*F.
2. Place the peeled garlic in a deep baking dish.
3. Add enough oil just to cover the garlic.
4. Add the rosemary, then bake in the oven for approximately 45 minutes to an hour.
5. You want the garlic to be soft and have a light golden color.
6. Once this has been achieved, let the confit cool down to room temperature.
7. Once cooled, set aside one cup for the miso garlic butter, and store the rest in the fridge.
8. The confit should stay fresh up to 3 weeks.
For the miso garlic bread
1. Start by adding the softened butter into a food processor.
2. Also, add the red miso paste, reserved garlic confit, and scallion greens.
3. Blitz in the food processor until it is uniform in color and forms a smooth butter.
4. Using the bread of your choice, spread a thin layer of the butter on top.
5. Bake in a preheated 375*F oven for approximately 8-10 minutes.
6. You want the butter to be melted and the bread to be slightly toasted.
7. Best served when warm.
8. Place any leftover butter in a container and place in the fridge or freezer for future use.
