- 2 c canned diced tomatoes
- 0.25 c diced onions
- 1 tbsp sazon
- 0.25 tbsp avocado oil
- 4 c white rice
- 3 garlic cloves
- 1 c peas and carrots
- 1 tsp salt
- jalapeno slices
- 4 c chicken broth

Directions

Blending the ingredients
1. In a blender, add the tomatoes, onion and sazon and blend well.
Preparing the rice
1. In a large pot or caldero (dutch oven), add the oil, blended tomatoes, garlic and rice.
2. Stir fry on high heat for a few minutes.
3. Add the broth and vegetables until you cover the rice (about 1/4 inch above the rice).
4. Mix well and allow the liquid to boil and slightly disappear.
5. Reduce the heat to low, add the jalapeño slices if desired, cover and cook on low for a minimum of 20 minutes without uncovering.
Final steps
1. After 20 minutes, stir the rice by bringing the bottom rice to the top, cover and cook for 5 more minutes until the rice is completely cooked and fluffy.
2. Enjoy with your favorite protein or during your next taco night.
