- 0.75 c Coconut oil, melted
- 1 c light brown sugar, tightly packed
- 0.5 c Granulated sugar
- 2 tsp Vanilla extract
- 0.5 c Unsweetened applesauce
- 3 c Flour, all purpose or gluten free 1 to 1 flour
- 1 tsp Baking soda
- sea salt, pinch
- 1 c vegan chocolate chips

1. First, preheat oven to 375 degrees Fahrenheit.
2. Line a baking pan with parchment paper.
Mixing Ingredients
1. In a large mixing bowl, add melted coconut oil, brown sugar and granulated sugar. Stir until combined.
2. Add in vanilla extract and applesauce. Stir to combine.
3. Then, add in flour, baking soda, and sea salt. Stir until combined.
4. Fold in chocolate chips. The dough may look slightly greasy due to the coconut oil.
Shaping and Baking
1. Use an ice cream scooper to scoop balls of dough onto lined baking pan.
2. Then, use hands to slightly flatten each ball of dough into a cookie shape. These cookies do not spread much while baking.
3. Bake for 8 to 9 minutes or until edges are lightly golden brown.
1. Lastly, remove from oven. Allow cookies to cool on pan for 5 to 10 minutes before transferring to a cooling rack.
