- 120 grams pastry flour
- 60 grams Cornstarch
- 45 grams melted butter
- 1 tbsp vanilla extract
- 500 grams Heavy cream
- 35 grams White sugar
- 100 grams Water
- 100 grams White sugar

1. whip eggs and sugar together until light, airy and doubles in size, it takes about 5 minutes with a stand mixer.
2. Fold in pastry flour and butter, alternating between both ingredients until it is all used up.
3. Scoop in 2 lined 8 inch cake pans tapping the bottom to remove any air bubbles.
4. Bake at 325F for 30-35 minutes, or until a skewer comes out clean.
5. boil the 100g water and 100g sugar together to make the simple syrup and let cool. Whip the 35g of sugar with the whipping cream until it is stiff peak.
6. Trim, assemble and decorate!
