Ingredients

Pork Belly Recipe
- 2 lbs pork belly
- 1 Red onion, diced
- 5 cloves Garlic, minced
- 0.5 tbsp Ginger, minced
- 1 large tomato
- 1 Jalapeño, sliced rounds
- 1 large Asian eggplant
- 2 tbsp bagoong
- 1 tbsp Oyster sauce
- 1.5 c coconut soda
- 0.25 c coconut vinegar
- 1 tsp Salt
- 0.5 tsp Black pepper

Directions

Preparation of Pork and Vegetables
1. Cut the pork belly and season with salt and pepper.
2. Cut and prep all the vegetables.
Searing of Eggplant and Pork
1. In a large pot, sear the eggplant flat side down. Set aside.
2. In the same pot, sear the pork belly in batches. Set aside.
Sautéing and Cooking of Ingredients
1. In the same pot, sauté the onion, ginger, and garlic until it is fragrant.
2. Next add the bagoong and sauté until it has slightly darkened in color.
3. Add the tomatoes and sauté for 3 minutes.
4. Add the pork back in, along with the oyster sauce, coconut soda, and coconut vinegar.
5. Once it comes to a boil, bring it to a simmer and put a lid on it.
6. Cook for 35-45 minutes or until pork is tender.
Final Steps
1. After the pork is tender, add the fried eggplant, put the lid back on, and cook for 5 minutes.
2. After the 5 minutes, add the jalapeños, put the lid back on, and cook for 2 minutes.
Serving Instructions
1. Serve hot, and best enjoyed with steamed white rice.
