Goat Magaaz (brain)
- 5 Goat Magaaz (brain)
- water, to boil
- 1 Onion, medium, thinly sliced
- 2 tbsp Garlic, crushed
- 2 tbsp Ginger, crushed
- 1 Tomato, large, cubed
- 1 tbsp Cumin seeds
- 1 tsp Turmeric powder
- 0.5 tsp red chili powder
- 1 tsp coriander powder
- 0.5 tsp cumin powder
- Salt, to taste
- 2 tbsp Cilantro, fresh
- 2 tsp Ginger, julienne
- 2 Eggs

Preparing the Magaaz
1. In a pan, add magaaz and water.
2. Bring it to boil and let it cook for 15 minutes.
3. Rinse it in some running water for a couple of times and take off any excess veins and skin.
4. Set it aside.
Preparing the Gravy
1. Add oil and onion to the frying pan.
2. Cook it for 5 minutes and then add garlic.
3. Fry that for 2 minutes and then add the ginger.
4. After 2 minutes, add tomatoes.
5. Let it cook for 10 minutes.
6. Then add the boiled Magaaz and mix it well.
7. Add 2 eggs and scramble it in the gravy.
Final Steps
1. Once cooked well, add cilantro and ginger on top.
