Pork Belly
- 2 lbs pork belly
- 1 Garlic, head
- 1 Red onion
- 3 Bay leaves
- 1 tbsp peppercorns
- 2 tbsp Salt
- Fish sauce
- Mang Thomas lechon sauce

Preparing the Pork Belly
1. Add water to a pot to completely cover the pork belly with onion, garlic, peppercorn, salt, and bay leaves.
2. Add your pork belly and boil for 30-40 minutes until pork belly is tender.
3. Let your pork belly cool down and pat dry.
4. Poke holes in the skin with a fork.
5. Marinate all sides with fish sauce.
6. Let your pork belly dry overnight.
Air Frying and Serving
1. Air fry pork belly at 360 degrees for 35 minutes or until your desired crispness.
2. Cut into small cubes.
3. Serve with Mang Thomas and rice.
