Ingredients

- 1 can garbanzo beans
- 0.5 can Black beans, drained & rinsed
- 0.25 c red onions
- 0.5 c cucumbers
- 1 Roma tomato
- 0.25 c Fresh parsley
- 0.25 c Fresh mint
Dressing
- 0.25 c Olive oil
- 2 tbsp Lemon juice
- 2 tbsp Red wine vinegar, or apple cider vinegar
- 2 clove Garlic, finely chopped
- Salt, to taste
- Pepper, to taste

Directions

Preparation of Ingredients
1. Cut all fresh ingredients: parsley, mint, cucumber, tomatoes, onion & garlic.
2. Drain & rinse garbanzo & black beans.
3. Add both beans, cucumber, tomato, onion, parsley, & mint to a bowl. Set aside.
Dressing Preparation
1. Get a small bowl for the dressing. Add olive oil, lemon juice, red wine vinegar, & garlic. Whisk until emulsified (until all liquids combine together). Then add salt & pepper to taste.
Final Steps
1. Add dressing into the salad mixture, mix well, add more salt/pepper if needed & enjoy!
Storage and Serving Suggestions
1. Store this salad in the fridge. Eat as is or make a wrap with lavash bread, your favorite spread & the salad mix! I like to let the salad sit for at least 30 minutes.
