Ingredients

For the wings
- 2 lb whole chicken wings
- 1 tbsp Kosher salt
- 1 tbsp Black pepper
- 1 tbsp Garlic powder
- 1 tbsp Onion powder
- 1 tbsp Smoked paprika
- 1 tsp five spice seasoning
- 1 tsp Cayenne pepper
- 1 tbsp Mirin
- 4 cloves Garlic
- 1 tbsp Cornstarch, mixed with cold water to form a slurry
For the wet batter
- 0.5 c Potato starch
- 0.5 c Baking powder
- 0.5 c Cornstarch
- 0.5 c Rice flour
- 1 tbsp Kosher salt
- 1 tbsp Black pepper
- 1 tbsp Garlic powder
- 1 tbsp Onion powder
- 1 tbsp Smoked paprika
- 1 tsp five spice seasoning
- 1 tsp Cayenne pepper
For the sauce
- 0.5 c Brown sugar
- 2 tbsp Unsalted butter
- 0.25 c Rice vinegar
- 0.25 c Soy sauce
- 0.5 tbsp Sesame oil
- 1 tbsp garlic paste
- 1 tbsp minced ginger
- 1 tsp red chili paste
- 1 tsp Hot sauce
- 1 tsp Honey
- 1 tbsp Cornstarch, plus cold water

Directions

Seasoning the Chicken Wings
1. Season your chicken wings with the salt, pepper, garlic and onion powder, cayenne pepper, paprika, five spice seasoning, mirin, and minced garlic.
2. Let it marinate for at least 30 minutes.
3. Before cooking, add cornstarch to the wings and let it sit for at least 10 minutes.
Preparing the Batter and Cooking the Wings
1. Combine your wet ingredients to form your batter.
2. Heat your oil until it reaches 325 degrees.
3. Dip your chicken in the wet batter letting some of the excess drip off.
4. Add your wings to the oil and let it cook for 4 minutes.
5. Cook in batches and once finished, heat your oil to 350 degrees.
6. Add the wings in the 350 degree oil and cook until perfectly golden brown or it reaches an internal temperature of 165 degrees.
Preparing the Sauce and Serving
1. Combine all of your sauce ingredients in a pan and simmer for five minutes.
2. Pour onto your wings and serve immediately!
