Kimchi Fried Rice
- 1 c kimchi
- 0.5 Onion
- Scallions
- 3 strips Bacon
- Rice, day old
- 1 tbsp gochujang
- 1 tbsp Sugar
- 1 tbsp Soy sauce
- 1 tbsp Butter
- kimchi juice
- Sesame oil
- Pepper
- furikake seasoning
- Mozzarella cheese, in the middle

Preparation of Ingredients
1. Cut kimchi, onion, scallions, and bacon.
Cooking the Bacon and Vegetables
1. Fry bacon on medium high heat and set aside.
2. Cook onion and kimchi with the bacon fat.
3. Add back in the bacon.
Adding the Rice and Seasonings
1. Add rice and break it up in the pan.
2. Put in gochujang, sugar, soy sauce, butter, and kimchi juice.
3. Keep mixing the rice together until well combined.
4. Season with pepper and sesame oil.
Optional: Making the Waffle
1. Preheat waffle maker and spray it with cooking spray.
2. Add the kimchi fried rice and some cheese.
3. Cook until very crispy and the rice is fit into the waffle maker mold.
Garnishing and Serving
1. Top with a fried egg, scallions, and furikake.
