Main Ingredients
- 2 lb jumbo shrimps
- 2 Jalapeño, sliced
- 1 Ginger, cut into slices
- 0.5 White onion, cut into thick slices
- 3 green onion stalks
- 0.5 Garlic, minced
- 6 oz Potato starch
- salt and pepper
- 1 gallon Cooking oil
- 1 tbsp Soy sauce
- 2 tbsp Oyster sauce
- 2 tbsp Sugar
- 0.5 tbsp chicken powder
- 0.5 tbsp Sesame oil
- 1 tbsp Dark soy sauce
- 3 tbsp water

For the deep frying
1. In a deep fryer, add 1 gallon of cooking oil and set to 375 F.
2. Lightly coat your jumbo shrimps with potato starch, salt, and pepper.
3. Once the oil is hot, add your shrimp and allow to cook for 3 minutes.
4. Then allow to cool on a plate with a paper towel. Set aside for now.
For the sauce
1. In a small bowl, combine all the ingredients listed under “for the sauce”. Set aside.
For the stir fry
1. In a large wok, heat 2 tbsp of oil over medium high heat.
2. Once the oil is hot, add your sliced onion and ginger. Cook for 1 minute.
3. Add your sliced jalapeño and ginger. Cook for another minute.
4. Add your fried shrimps and sauce mixture. Combine and cook for another minute.
5. Add your green onions and turn off the heat. Combine again to make sure everything is well mixed together.
For serving
1. Serve hot with a side of garlic noodles.
