For the meat in juice
- 0.5 cup Bacon, chopped
- 700 g beef steak
- 6 Green tomatoes, grilled
- 0.5 Onion, grilled
- 1 clove Garlic, grilled
- 1 cup Cilantro leaves, washed and disinfected
- 2 Serrano peppers, grilled and cleaned (optional)
- 2 cup Water
- 2 cup pinto or bayo beans
- pinch salt and fresh black pepper
To serve
- 8 chambray onions
- 6 Tbs Cilantro leaves, washed and disinfected
- 2 Radishes, in thin slices
- 0.25 cup Onion, finely diced
- 1 Avocado, sliced
- 3 Limes, quartered

For the meat
1. Sear the bacon in a pot and drain any excess fat. Stir in the meat and cook until it’s browned.
2. In a blender, blend green tomatoes, onion, garlic, cilantro and serranos with water; pour into the pot and boil for 5 minutes on high heat. Lower the heat and cover with a lid. Simmer for around 30 minutes, until the meat is completely soft and the flavor is intensified. Add the beans, cook for 5 more minutes so they heat up and season with salt and pepper.
To serve
1. Serve the meat in its juice in bowls with grilled onions and garnished with cilantro, radish, onion and avocado.
2. Share and enjoy with some lime juice.
