- 1 cup Black beans, cooked, drained
- 0.25 tsp Cayenne pepper
- 0.25 cup Cilantro, washed and disinfected
- 1 tsp Garlic powder
- 1 cup Haricot beans, cooked (with stock)
- 0.25 cup Jalapeño, pickled
- 1 Jalapeno pepper, pickled
- 2 Jalapeno pepper, sliced
- 0.5 cup Nutritional yeast
- 0.25 cup oat milk, unsweetened
- 1 tsp Onion powder
- 3 Tbs pickle juice (brine)
- 6 Red onion, rings
- 0.25 cup Salsa, of choice
- pinch Salt
- 1 Tomatoes, diced
- 300 g tortilla chips
- 1 tsp Turmeric

For the cheese sauce
1. In a blender or food processor, blend all the ingredients until smooth and heavy, if necessary, add a bit of extra milk.
2. Heat the sauce in a small pot at medium heat and place to the side.
For the nachos
1. Place the nacho chips in a bowl or large plate.
2. Baste with a bit of cheese sauce, place on top the beans, peppers and diced tomato.
3. Cover with more sauce and plate with red onion and cilantro.
4. Share and enjoy.
