- 4 Roma tomatoes, sliced thin
- 2 red bell peppers
- 1 Yellow bell pepper, chopped
- 1 blub Garlic
- 2 cup Cherry tomatoes
- 1 cup Shallots, chopped
- 1 tsp Kosher salt
- 1 tsp Black pepper
- 1 Yellow squash, sliced thin
- 2 green zucchinis
- 1 Eggplant, sliced thin
- 1 8 oz can Tomato sauce, of choice
- 1 can Tomatoes
- 2 Tbs Olive oil
- 2 sprig Fresh thyme

1. Boil roma tomatoes for 30 seconds and place in an ice bath. This allows the skin of the tomato to be removed easier.
2. Slice tomatoes thinly.
3. Preheat your own to 350 degrees.
4. To a sheet pan, add red and yellow bell peppers, cherry tomatoes, bulb of garlic, shallots, salt, and pepper. Bake for 25 minutes or until charred and roasted.
5. Add sheet pan ingredients to a blender along with kosher salt, olive oil, tomato sauce, and diced tomatoes. Blend until finely pureed.
6. Add some sauce to the bottom of a round oven safe dish and thyme.
7. Layer ratatouille with squash, zucchini, tomatoes, and eggplant.
8. Add salt, pepper, and olive oil to the top. Cover with foil or parchment paper and bake for 30 minutes covered, then ten to fifteen minutes uncovered.
9. Serve immediately!
