- 2 tsp Active dry yeast
- 3 cup All purpose flour
- 1 tsp Extra virgin olive oil
- 1 tsp Granulated sugar
- 1 tsp Kosher salt
- 1 cup Warm water, at 95-100 degrees

1. Preheat your oven to 500 degrees with a cast iron pan inside.
2. Add warm water, sugar, and yeast to a large bowl.
3. Add half a cup of sifted flour to the bowl. Mix and cover for 10 minutes.
4. Add olive oil and salt to the mixture.
5. Sift 2 cups of flour into the mix.
6. Knead and cover in a greased bowl for an hour.
7. Use remaining flour to coat the dough to prevent it from sticking.
8. Divide into 8 equal pieces.
9. Roll out into circles and crimp into the dough.
10. Add each pita to the pan and cover for 3-5 minutes.
11. Cover with a warm towel on a plate until you’re ready to serve!
