- 4 cups Flour, 500g
- 1.5 cups Warm water, 370ml
- 2 tbsp yeast, 10g
- 1 tsp Kosher salt

Preparing the Dough
1. In a bowl add warm water and yeast.
2. Whisk it well and let it sit for 10 minutes.
3. Then add the flour and salt.
4. Mix it with a spatula and cover it with a damp cloth for 2 hours at room temperature. It should double in size.
5. Now transfer the dough to a floured surface.
6. Fold it over twice and repeat it again.
7. Pick each corner and bring it inwards to make it into a ball.
8. Flip it and roll it around against your palms until it becomes round.
Resting and Baking the Dough
1. Place the dough on a large piece of parchment paper.
2. Cover it with a damp cloth and let it rest for 30 minutes.
3. Preheat your cast iron pan to 430 degrees.
4. Place the dough with the parchment paper in the cast iron, being careful not to burn your fingers.
5. Make decorative cuts on the dough.
6. Add 3 ice cubes and cover it completely. The steam is necessary for the crunchy crust.
7. Bake it for 30 minutes.
8. Then take the lid off and bake it for an additional 20 minutes for that golden crust.
Cooling and Serving
1. Once it’s out of the oven, let it sit for at least 30-45 minutes before slicing it.
