- 2 c Kale, chopped
- 1 tbsp Extra virgin olive oil
- 2 Sweet potatoes, small, baked
- 1 c Chickpeas, air fried
- 2 Lombardi peppers
- 2 tbsp pickled onions
- 2 Carrots, peeled
- 1 Orange, sliced
- 1 Grapefruit, sliced
- 2 tbsp Pumpkin seeds, or nuts of your choice
- 0.5 c COR Balsamic Vinaigrette

Preparation of Kale
1. Wash kale thoroughly.
2. Make sure to spin dry or there will be water left in between the leaves which can leave the vinaigrette diluted.
3. In a salad bowl, break apart the kale leaves and then pour some olive oil.
4. Massage the kale to help the fibrous leaves become softer and tender. Easier to chew and digest.
Preparation of Veggies
1. Then add all your veggies.
2. Roast your veggies and beans ahead of time.
3. Sprinkle some salt and extra virgin olive oil to your cubed sweet potatoes and few spices like cumin powder, coriander powder, smoked paprika and salt on chickpeas before placing them in the oven at 375F for 30-45 minutes.
4. Rotate and mix in between.
5. Store in the fridge for 3-4 days.
Final Steps
1. Shake and pour the Balsamic Vinaigrette all over the veggies.
2. Mix well and serve.
3. Optionally, make it 8 hours in advance and let the flavors marry.
