- 15 green bananas
- 1 c Olive oil
- 2 Onions, sliced
- 1 tsp vinegar
- 4 Bay leaves
- 1 tsp peppercorns
- 1 tsp Garlic, minced
- Salt, to taste
- Pepper, to taste

1. Cut the corners of the bananas.
2. Slice the peel through the middle.
3. In a large pot full of water, boil the bananas for 20 minutes or until softened.
4. Drain and let cool with running cold water.
5. Remove the peel and slice in circles.
6. Prepare the pickled onions by cooking the onions, with the oil, vinegar and spices until the onions are translucent.
7. In a large bowl, add the cooked bananas and mix in the "escabeche".
8. Add adobo to taste, and enjoy.
1. Cooked chicken gizzards or shredded chicken can be added.
2. As well as refrigerated and enjoyed cold.
