Spinach and Cheese Filo Pie
- 3 10 oz packages Spinach, thawed, drained, and squeezed
- 2 Onions, chopped
- 0.5 bunch flat parsley
- 1 lb shredded cheese, brick, Monterey Jack, or mozzarella
- 2 c cottage cheese
- 2 tsp Salt
- 0.5 tsp Black pepper
- 0.25 tsp Red pepper
- 1 package Filo dough
- 3 Eggs
- 1 Egg, additional
- 1.5 sticks Butter

Preparation of Spinach Mixture
1. In a bowl, mix the thawed and drained spinach, chopped onions, parsley, shredded cheese, cottage cheese, salt, black pepper, red pepper, and three eggs.
Preparation of Filo Dough
1. Take the thawed Filo dough out of the fridge. Open one packet; put the other back in the fridge.
2. On each tray, lay two sheets of Filo dough. Brush with melted butter.
3. Add two more sheets of Filo, brush with butter again, then two more sheets.
Assembling the Spinach Pies
1. Divide the spinach mixture equally among the three trays.
2. Layer two more sheets of Filo, brush with butter, add another two sheets, brush with butter, and top with the final two sheets, cut into triangles.
3. Brush an egg wash on top of all the spinach pies.
Baking and Serving
1. Bake at 375°F for 30 minutes or until golden brown.
2. Enjoy one tray for dinner and freeze the other two for later!
