- 0.5 c Butter, cold
- 0.5 c Granulated sugar
- 0.5 c Brown sugar, tightly packed
- 1 Egg
- 1.5 tsp Vanilla extract
- 1.25 c gluten free 1 to 1 flour
- 1.5 c gluten free old fashioned oats
- 0.5 tsp Baking soda
- pinch sea salt
- 0.75 c Chocolate chips

1. First, preheat oven to 350 degrees Fahrenheit.
2. Line a baking pan with parchment paper.
Mixing the Ingredients
1. In the bowl of a stand mixer, add cold butter, sugar and brown sugar.
2. Mix for 2 to 3 minutes, until no clumps of butter remain.
3. Then, add in egg and vanilla.
4. Stir to combine.
5. Add in gluten free flour, oats, baking soda and salt.
6. Stir to combine.
7. Fold in chocolate chips.
Baking the Cookies
1. Use ice cream scoop to scoop balls of dough onto lined baking pan.
2. Bake for 9 to 10 minutes or until edges are lightly golden.
Cooling and Serving
1. Finally, remove from oven.
2. Allow the cookies to cool on pan for 5 minutes before carefully transferring to a cooling rack.
