Main Ingredients
- cooked rice
- 2 eggplants
- 1 block tofu
- 4 tbsp Sesame oil
- 5 tbsp teriyaki sauce
- 1 tbsp Soy sauce
- 1 tbsp Honey
- 1 clove Garlic, finely minced
- Sesame seeds
- spring onion

1. Pre-heat the oven to 180 degrees.
2. Cut eggplants into about 1 cm thick slices and place on a baking tray.
3. Slice tofu into thin slices, and lay it on the tray too.
Marinade Preparation
1. In a bowl, combine all ingredients for the marinade, mix well, and brush over both sides of the eggplant and tofu slices.
2. Bake for 15-20 minutes until eggplants are softened.
Preparing the Rice
1. Boil rice in the meantime.
1. In a bowl, scoop in rice, and top with caramelized eggplant and baked tofu.
2. Sprinkle over some spring onion and sesame seeds.
3. Enjoy!
