- 6 Tbs Aquafaba
- 100 ml sunflower oil
- 150 g Sugar
- 1 tsp Baking powder
- 1 tsp Vanilla extract
- 350 g gluten-free flour pre-mix
- 2 cup dulce de leche

1. In a bowl, pour the aquafaba and whisk until some bubbles appear. Add the oil, sugar and baking powder, keep whisking until fully incorporated.
2. Slowly, stir in the flour pre-mix and incorporate. Keep kneading until you get a smooth and soft dough, it shouldn’t stick to your fingers. Wrap in plastic wrap and rest in the fridge for 15 minutes.
3. Lightly flour your work surface (with gluten-free flour) and split the dough in half. Roll one half until it’s about 2 inches thick.
4. Place it on a detachable pie dish; ideally, the dough should be over the edge of the dish. Roll the other half and cut into long strips.
5. Fill with dulce de leche and assemble the lattice with the strips.
6. Bake at 180ºC/350ºF for 25 minutes or until the crust is golden brown.
7. Remove from the oven and let it cool.
8. Share and enjoy.
