- 1 c Butter, softened
- 0.5 c Granulated sugar
- 1 large Egg
- 0.5 tsp Baking powder
- 3 tsp Pure vanilla extract
- 3.25 cups gluten free flour, separated
- 4 drops food coloring gel
- 1 package premade frosting
- 2 tbsp sugar sprinkles

Directions

Preparing the Cookie Dough
1. In a stand mixer using paddle attachment mix softened butter on medium high speed for 2 minutes, butter will be fluffy and lighter in color.
2. Mix in sugar, egg, baking powder, and vanilla on medium low speed until combined well.
3. With a spatula scrape dough off the sides of the mixing bowl and continue to mix.
4. Slowly add three cups of gluten free flour, one cup at a time mixing on low speed.
5. Add desired food coloring gel and mix on medium until all food coloring is evenly distributed.
6. Cover mixing bowl with dough and place in the fridge for 45 minutes or overnight.
Rolling and Cutting the Cookies
1. When cookie dough is ready preheat oven to 350 degrees.
2. Add parchment paper to a large cookie sheet and set aside.
3. On your countertop place parchment paper and generously sprinkle gluten free flour.
4. Place cookie dough on top of gluten free flour and sprinkle gluten free flour on cookie dough and on rolling pin.
5. Roll dough until 1/4" and use cookie cutters to create cookie shapes.
6. Place cookies on cookie sheet 2" away from each other.
7. Continue to roll out and cut cookies until all dough has been used.
Baking and Decorating the Cookies
1. Bake cookies in the oven for 8-10 minutes.
2. Do not overcook, cookies will seem a little underdone but will continue to cook while cooling on the cookie sheet.
3. Place on cooling rack after cooling on cookie sheet for 8 minutes.
4. When cookies are cooled decorate with frosting and top with sprinkles.
