- 1 c all-purpose flour
- 2 tbsp light brown sugar
- 1 tbsp Baking powder
- 0.25 tsp Salt
- 1 Large egg
- 1 c Milk
- 2 tbsp Unsalted butter, melted
- desired toppings
- Nonstick cooking spray, for greasing the pan

Prepare the Pancake Batter
1. In a medium bowl, whisk together the flour, brown sugar, baking powder, and salt.
2. In another larger bowl, whisk the egg until blended.
3. Whisk in the milk and melted butter, then whisk in the dry mixture until well combined.
4. Transfer the pancake batter to ice cube trays, about 2 tablespoons each.
Cook the Pancakes
1. When ready to cook, heat a large nonstick pan over medium heat.
2. Spray with nonstick cooking spray.
3. Remove as many of the freezer pancakes as you’d like and cook until the pancakes are puffed on top and golden brown on the bottom, 4-5 minutes, then flip and cook on the other side until risen and cooked through, 1-2 minutes more.
Serve the Pancakes
1. Serve with butter, maple syrup, and fresh fruit, as desired.
