Ingredients

- 1 lb steak
- 1 Red pepper
- 1 green pepper
- 1 yellow pepper
- Cheese, (Chihuahua, Oaxaca, or Mozzarella)
- 1 Lime, juiced
- 1 Red onion
- 1 tbsp Olive oil
- 1 tsp Cumin
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 0.5 tsp Chili powder
- 0.5 tsp Black pepper
- 0.5 tsp Paprika, smoked
- 0.5 tsp Salt
Sauce
- 6 tbsp Red wine vinegar
- 3 tbsp Honey
- 0.75 c Vegetable oil
- 0.5 tsp Dried oregano
- 1.5 tsp Salt
- 0.5 tsp Black pepper
- 2 Chipotle peppers, in adobo sauce
- 2 clove Garlic, chopped

Directions

Preparation of peppers, onions, and steak
1. Slice the peppers and onions, add them to a bowl and season with the blend above.
2. Season the steak with the olive oil, lime juice, and seasoning blend above.
3. Let marinade for about 30 minutes to an hour.
4. Sauté the peppers until tender.
5. You can either cut your steak before or after you cook it.
For the sauce
1. Blend the ingredients until smooth.
2. Mix this with sour cream.
Assembling the quesadilla
1. Add a tortilla to a hot skillet, a layer of cheese, the steak, then the fajita veggies.
2. Top with more cheese.
3. At this point you can either fold the tortilla over if all the meat and veggies are on one side or top with another tortilla.
Final steps
1. Cut the quesadillas into portions.
2. Dip and enjoy.
