Mango Salsa
- 1 mango, ripe
- 0.5 Cucumber, diced
- 0.25 Red onion, diced small
- 0.5 Red pepper, diced
- 0.5 jalapeno
- 0.25 c Cilantro, chopped
- 1.5 Limes, juiced
- Kosher salt
- tajin
- 2 tsp West African Heritage Spices Spice Tribe
- 1 tsp Goya Spices
- 1 tbsp Butter
- 2 tbsp EVOO

For the salsa
1. Mix all the ingredients for the salsa together.
2. Let it sit in the refrigerator ahead of time, at least 30 minutes to 1 hour.
For the fish
1. Season your fish and drizzle with extra virgin olive oil (EVOO).
2. In a skillet, add EVOO, and heat to medium heat.
3. Add fish, skin side down, and cook for three minutes.
4. After 3 minutes, add in butter and flip.
5. Add more butter and baste for the last 3 minutes, until your fish is cooked.
For the assembly
1. Heat up your tortillas.
2. Add fish and salsa and enjoy.
