- 3.5 oz vegan feta cheese
- 0.25 Red onion, thinly sliced
- 0.5 Lemon, juiced
- 0.25 tsp Salt, or to taste
- 0.25 tsp cracked pepper
- 1 tsp Dried thyme

Preparing the Sweet Potatoes
1. Start by washing the sweet potatoes and cutting them in half.
2. Score them with a crosshatch pattern and brush with olive oil, then season with salt and roast in the oven at 395 degrees F until they are soft.
3. While the potatoes are cooking, massage the sliced red onion with salt and lemon juice, and let it sit until you're ready to serve.
Finalizing the Dish
1. Once the potatoes are done, let them cool for a bit to avoid burning yourself.
2. Cut the vegan feta cheese into squares and remove the same-sized squares from the potatoes.
3. Replace them with the feta cheese and bake for another 5 minutes until the cheese is soft.
4. Season the potatoes with thyme and cracked pepper, and then garnish with the red onions.
