- 4 cup Spinach, fresh, cut the stems into 2-inch pieces if using, rinse thoroughly
- 1 Carrot, diced
- 1 cup Mushrooms, sliced
- 1 Egg, beaten
- 2 tsp Soy sauce
- 1 tsp Sesame oil
- 1 tsp Garlic salt

1. In a pot, heat 1 teaspoon oil over medium heat. Add diced carrots and sliced mushrooms, saute for 1 minute.
2. Add 3 cups of water to the pot and bring it to a boil, then reduce to a simmer.
3. Add soy sauce, sesame oil, and salt. Stir to mix.
4. Add spinach and cook for 30-50 seconds until slightly wilted.
5. Drizzle in the beaten egg slowly into the simmering soup in a circular pattern. Let it sit for about 10-20 seconds, then stir the soup with a spatula or a spoon.
6. Remove from heat. Ladle soup into a bowl and enjoy.
