- 2 6-8 oz. salmon filets
- 1 shallot
- 3 cloves Garlic, finely diced
- 1 spicy chili pepper
- 1 tsp lime juice
- 1 heaping tbsp miso paste
- 1 can coconut milk
- 2 heaping tbsp red thai curry paste
- 1 tbsp honey
- 0.5 tsp fish sauce
- basil
- Cilantro

Heat oil and cook aromatics
1. Heat oil in a pan over medium-high heat for a few minutes.
2. Add onion, garlic, ginger, and chili pepper.
3. Cook for a few minutes.
Add curry paste and other ingredients
1. Just when the aromatics start to brown, add curry paste and cook down for about a minute.
2. Add miso, coconut milk, lime juice, and honey.
3. Season to taste with black pepper and fish sauce.
4. Taste before adding any salt, as the miso and fish sauce should have incorporated the right amount of salt already.
Season and poach salmon
1. Season salmon fillets with salt and pepper.
2. Bring the sauce to a boil, turn heat down to low, and add the salmon fillets to the sauce.
3. Poach for 10 minutes.
Serve and garnish
1. Serve with rice.
2. Garnish with basil and cilantro.
