Garganelli Bolognese
- 9 oz Gluten Free Garganelli noodles
- 1 tbsp Olive oil
- 1 medium Yellow onion, diced
- 3 large Carrots, peeled and diced
- 3 celery ribs
- 1.5 tbsp Garlic, minced
- 1 lb Italian sausage
- 1.25 c Marinara sauce
- 1 tsp Basil
- 1 tsp Oregano
- 1 tsp pink Himalayan salt
- 0.5 tsp Black pepper, coarse
- 0.5 tsp Red pepper flakes
- 2 cans fire roasted diced tomatoes
- 1.5 c beef broth
- 0.333 c Coconut milk
- 1 tbsp Fresh basil, garnish

Preparation of Vegetables and Sausage
1. In a Dutch oven, heat olive oil over medium heat.
2. Add onion, carrots, and celery. Sauté for about 8 minutes or until onions are translucent.
3. Add the garlic and sauté for 1 more minute or until fragrant.
4. Press the cooked vegetables to the side of the Dutch oven and add mild sausage.
5. Using a wooden spoon, break up Italian sausage, cook until no longer pink.
6. Add the oregano, basil, pink Himalayan salt, coarse black pepper, and red pepper flakes.
7. Stir until combined well.
Adding Sauce and Simmering
1. Add marinara sauce and diced tomatoes, stirring continuously for 2 minutes.
2. Add beef broth and bring the bolognese to a boil.
3. Reduce heat to a simmer and cover.
4. Simmer for 30 minutes stirring periodically.
Preparing Noodles and Final Steps
1. Bring a pan of water to a boil.
2. Cook noodles until done but not overly soft.
3. When it is time to serve, add noodles and coconut milk to bolognese.
4. Stir until combined well.
5. Top with chopped basil.
