- 3 tbsp Soy sauce
- 2 tbsp Tahini
- 2 tbsp Chinese black vinegar
- 1 tbsp Sugar
- 1 tbsp chili oil
- 2 clove Garlic, minced
- 1 tsp Fresh ginger, grated
- 2 tbsp vegetable or peanut oil
Ground Pork
- 0.5 lb Ground pork
- 1 tbsp Soy sauce
- 1 tbsp Shaoxing wine, or dry sherry
- 1 tsp Cornstarch
Other Ingredients
- 8 oz Chinese egg noodles
- Green onions, chopped for garnish

Prepare the Sauce
1. In a bowl, mix together soy sauce, Tahini, Chinese black vinegar, sugar, chili oil, minced garlic, and grated ginger.
2. Heat vegetable or peanut oil in a small saucepan until hot but not smoking.
3. Pour the hot oil over the sauce mixture.
4. Stir well to combine.
5. Set aside.
Prepare the Ground Pork
1. In a bowl, combine ground pork with soy sauce, Shaoxing wine (or dry sherry), and cornstarch.
2. Mix well.
3. In a pan over medium heat, cook the seasoned ground pork until browned and cooked through.
4. Break it into small pieces as it cooks.
5. Set aside.
Cook the Noodles
1. Cook the Chinese egg noodles or any other thin noodles according to the package instructions.
2. Drain and set aside.
Assemble the Dan Dan Noodles
1. Place a portion of cooked noodles in a serving bowl.
2. Spoon a generous amount of the prepared sauce over the noodles.
3. Top with the cooked ground pork.
4. Garnish the Dan Dan Noodles with chopped green onions and crushed peanuts.
5. Give everything a good mix before eating to ensure the flavors are well distributed.
