- 4 tbsp Olive oil
- 6 Roma tomatoes, halved
- 0.5 large onion
- 2 jalapeños
- 1 bell pepper
- 5 Garlic cloves
- 1 bunch of cilantro
- 2 Limes, juiced
- Salt, to taste

1. Preheat your oven to 425 degrees F.
2. Coat a baking sheet with olive oil and place your veggies (tomatoes through garlic cloves) cut side down on the sheet.
3. Sprinkle with a pinch of salt and place into the oven for about 20 minutes or until the pepper and tomato skins start to char and lift off.
4. Remove the veggies from the oven and allow them to cool down for a few minutes.
5. While still hot (but not so hot you burn yourself) remove the skins from the tomatoes (optional).
6. Once the veggies have cooled, place them and any juices from the sheet pan into a blender along with a bunch of cilantro (stems and all) and the lime juice.
7. Pulse until your desired smoothness.
8. Salt to taste and refrigerate for at least an hour.
9. Enjoy!
