- 1 lb ground turkey, or Beef
- 0.25 c Onions
- 0.25 c Bell peppers
- 0.25 c Celery
- 2 tbsp Olive oil
- 3 clove Garlic, minced
- 2 c cooked white rice
- Cajun seasoning
- 2 c Mozzarella cheese

1. Preheat oven to 350.
2. Cut the tops off the Bell peppers and remove the seeds and ribs. You can use the tops for the peppers in the trinity. If the peppers are having trouble standing, shave off parts of the bottom to make them flat. Set peppers to the side.
3. Brown the meat, adding in the trinity halfway. Add in minced garlic and cook for about two minutes until fragrant.
4. Season the ground meat with your favorite Cajun seasoning. Then add two cups of COOKED rice. Mix this then taste and adjust seasoning.
5. Line the peppers up in a baking dish. Add in the Dirty Rice and top with the mozzarella cheese.
6. Pour in just enough water to cover the bottom of the baking dish and cover with aluminum foil.
7. Bake for about 30 minutes or until the peppers are tender and enjoy!
