- 4 tbsp Extra virgin olive oil
- 1 tbsp Cumin seeds
- 1 Onion, medium, chopped
- 3 Tomatoes, medium, sliced
- 1 tbsp Tomato paste
- salt and pepper, to taste
- 3 Eggs
- Feta cheese
- Cilantro, chopped
- 2 tbsp ghee

1. In a shallow pan add olive oil.
2. Once hot, add cumin and toast it for just 30 seconds for that toasty aroma.
3. Then add onions and sauté for a couple of minutes until it’s translucent.
4. Now add salt and pepper.
5. Some tomato paste goes in.
6. You must mix it well.
7. Now it's time to add tomatoes.
8. Cover and let it soften on medium heat for 10 minutes.
9. Uncover and mix well.
10. Once the oil separates, crack 3 eggs.
11. Salt and cover for an additional 5 minutes.
12. Time for some feta and cilantro leaves.
13. Enjoy it with any kind of bread you prefer.
