- 1 c date paste
- 2 tsp vanilla
- 0.125 tsp Salt
- 2 c pecans
- 12 oz cacao or chocolate chips

Roasting Pecans (Optional)
1. If desired, you can lightly roast your pecans at 350 F for 15 minutes or until aromatic. I do not roast mine.
Preparing Date Paste
1. Combine date paste, vanilla, and salt and cook on low-medium heat until it thickens and darkens slightly. 5-7 minutes.
Melting Chocolate
1. On a double boiler, melt your chocolate of choice until smooth.
Creating Chocolate Base
1. On a parchment-lined baking sheet, pour a teaspoon of melted chocolate onto your baking sheet.
2. Place 3-4 pecans on top of each circle of chocolate.
3. Refrigerate for 5-10 minutes to set.
Adding Date Caramel
1. Remove from the refrigerator and add a teaspoon of date caramel on top of the pecan bases.
Preparing for Chocolate Coating
1. Transfer your bases to a cooling rack.
2. Place another baking sheet under your rack to catch any excess chocolate.
3. Heat the chocolate again if it’s hardening.
Coating with Chocolate
1. Using a measuring cup or ladle, pour chocolate over the top of each “turtle”.
2. Make sure the chocolate has fully coated each one.
3. Allow to set on the counter or in the fridge.
Enjoying and Storing
1. Enjoy!
2. Store in an airtight container in the refrigerator or freezer.
3. Remove and thaw as needed.
