Shrimp Filling
- 8 oz minced shrimp
- 0.5 tsp Salt
- 0.25 tsp Sugar
- 0.25 tsp White pepper
- 1 tsp Cornstarch
- 0.5 tsp Sesame oil
- 1 tsp Oil
- 0.5 oz chopped bamboo shoots
Dough
- 1 c wheat starch
- 0.333 c Tapioca starch
- 0.25 tsp Salt
- 1 c boiled water
- 1 tsp Oil

Directions

Preparing the Filling
1. In a mixing bowl, make the filling by combining the listed ingredients.
2. Cover with plastic wrap and refrigerate while preparing the dough.
Preparing the Dough
1. Add wheat starch, tapioca starch, and salt to a large mixing bowl.
2. Stir the mixture and add boiled water.
3. Mix until no more wet starch is left, and start kneading the dough until all loose starch is incorporated.
4. Add 1 tsp vegetable oil and knead until the dough is smooth.
Dividing and Rolling the Dough
1. Transfer the dough onto a work surface and divide it into 4 pieces.
2. Keep the rest of the dough covered while working one piece at a time.
3. Roll the dough into a log and cut it into 4 equal sections.
4. Use a rolling pin to roll one out at a time until a circular-sized wrapper is formed.
Assembling the Dumplings
1. Lay two wrappers on the surface overlapping the edges.
2. Add 1 tsp of filling to each center and fold the edges over.
3. Press to seal tightly.
4. Roll the dumplings from one end to the other, creating a rose shape dumpling.
Steaming the Dumplings
1. Bring a large pot of water to boil and steam the dumplings over high heat for 7 minutes.
